Health tip: Italian Yellow Squash

Italian Yellow Squash
Ingredients:
- 1 lb yellow, medium summer squash
- 1 tbsp chopped parsley, finely minced
- 1 tsp Italian seasoning
- ½ tsp oregano leaves
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- ½ tsp black pepper
Directions:
- Clean the squash and cut into slices ¼-inch thick. Combine in a small bowl and mix together parsley, Italian seasoning, oregano, olive oil, vinegar, and pepper. Lightly coat the grill with cooking spray and preheat for 5 minutes.
- Place the squash on the grill, overlapping the slices, and cook for 6-8 minutes.
- In a serving bowl, toss the squash gently with Italian dressing and serve immediately.
