Apple Raisin Pancakes
Ingredients:
- All-purpose flour 3/4 cup
- Whole-wheat flour 3/4 cup
- Brown sugar, packed 2 tbsp.
- Baking powder 2 tsp.
- Baking soda 1/2 tsp.
- Ground cinnamon 1/2 tsp.
- Dark raisins 1/2 cup
- 1 large egg
- 1 can of unsweetened applesauce 14 oz.
- Milk 1/4 cup
- Cooking oil 2 tbsp.
Directions:
- Combine first 7 ingredients in medium bowl. Stir. Make a well in centre.
- Combine remaining 4 ingredients in small bowl. Add to well. Stir until just moistened. Batter will be lumpy.
- Preheat griddle to medium-high. Pour batter onto griddle using about 1/4 cup for each pancake.
- Cook for about 3 minutes until bubbles form on top and edges appear dry. Turn pancakes over. Cook for about 3 minutes until golden.
- Remove to large plate. Cover to keep warm. Repeat with remaining batter, spraying griddle with cooking spray if necessary to prevent sticking.
- Garnish with fresh fruit.
Makes about 14 pancakes.
