Apple Raisin Pancakes


Ingredients
:

  • All-purpose flour 3/4 cup
  • Whole-wheat flour 3/4 cup
  • Brown sugar, packed 2 tbsp.
  • Baking powder 2 tsp.
  • Baking soda 1/2 tsp.
  • Ground cinnamon 1/2 tsp.
  • Dark raisins 1/2 cup
  • 1 large egg
  • 1 can of unsweetened applesauce 14 oz.
  • Milk 1/4 cup
  • Cooking oil 2 tbsp.

Directions:

  1. Combine first 7 ingredients in medium bowl. Stir. Make a well in centre.
  2. Combine remaining 4 ingredients in small bowl. Add to well. Stir until just moistened. Batter will be lumpy.
  3. Preheat griddle to medium-high. Pour batter onto griddle using about 1/4 cup for each pancake.
  4. Cook for about 3 minutes until bubbles form on top and edges appear dry. Turn pancakes over. Cook for about 3 minutes until golden.
  5. Remove to large plate. Cover to keep warm. Repeat with remaining batter, spraying griddle with cooking spray if necessary to prevent sticking.
  6. Garnish with fresh fruit.

Makes about 14 pancakes.
