Health tip: Italian Yellow Squash

Try this potassium rich recipe, approved by one of our dietitians.

Italian Yellow Squash


Ingredients:

  • 1 lb yellow, medium summer squash
  • 1 tbsp chopped parsley, finely minced
  • 1 tsp Italian seasoning
  • ½ tsp oregano leaves
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp black pepper

Directions:

  1. Clean the squash and cut into slices ¼-inch thick. Combine in a small bowl and mix together parsley, Italian seasoning, oregano, olive oil, vinegar, and pepper. Lightly coat the grill with cooking spray and preheat for 5 minutes.
  2. Place the squash on the grill, overlapping the slices, and cook for 6-8 minutes.
  3. In a serving bowl, toss the squash gently with Italian dressing and serve immediately.

Makes 4 servings.
