Health tip: Try this bean salad recipe

Give this low fat, protein-rich bean salad recipe a try, approved by one of our dietitians.

Bean Salad


Ingredients
:

  • 1 (14.5 oz) can black beans
  • 1 (14.5 oz) can dark red kidney beans
  • 1 (15 oz) can garbanzo beans
  • 1 (14.5 oz) can pinto beans
  • 1 (10 oz) package frozen corn kernels, thawed
  • 1 tbsp vegetable oil
  • 1 tsp cumin
  • 2 tbsp chili powder
  • 1 tsp lime juice
  • 1 (8 oz) jar chunky salsa
  • 1 pinch dried parsley

Directions:

  1. Pour beans into a colander, and rinse under running water.
  2. In a large mixing bowl, toss beans and corn together with oil, cumin, chili powder, lime juice, and salsa. Sprinkle with parsley, cover, and chill.

Makes 8 servings.
